FORA BITES: Baked At The Cottage

Cottage season may be coming to a close, but remember, it’s not OVER. There are still bonfires to be burned, cannonballs to be splashed and (most importantly) dock drinks to be drank.

While you’re in ~cottage mode~ with a drink in hand, it’s easy to be tempted to grab a bag of chips instead of pausing your tanning session to make real food, but we’ve got three FORA Bites recipes that you can make no matter how ~buzzy~ you may get!  These snacks are the perfect daytime treat and won’t keep you from the water, the fire, or the beer pong table for too long!

LEMON AND BLUEBERRY BREAD PUDDING

WHAT YOU’LL NEED:
– 4x Croissants (stale is good)
– 2x Eggs
– 1x Cup of Milk
– 3x Tbsp Sugar
– 1x Tbsp Lemon Juice (Optional)
– 1x Cup of Blueberries

WHAT TO DO:
In an iron skillet (or a disposable aluminum-baking pan), place the blueberries and croissants, torn into large chunks. Whisk sugar, eggs, lemon juice and milk together with a fork (no fancy tools necessary!) Pour the custard mix over the croissants and blueberries and cover the skillet with foil. Put that cottage fire to good use and bake the bread pudding over hot coals for 20 min. Instead of placing the skillet directly over flames rake the coals to a thin layer. If this is too ambitious, place the pudding on the grill on the medium/ high heat for 20 min. Serve with ice cream, maple syrup (or another drink!)

GRILLED PEACHES WITH MAPLE WHIPPED CREAM

WHAT YOU’LL NEED:
– 3x Peaches halved
– ½ x Cup of Whipping Cream
– 1x Tbsp of Maple Syrup

WHAT TO DO:
Place the peaches on a hot grill until charred. About 5- 8 min and let cool. In a mason jar place the whipping cream and maple syrup. Shake it, vigorously, until think. Consider it your weekend work out. Top your charred peaches with the whipped cream and enjoy!

 

GRILLED WATERMELON WITH JALAPENO SUGAR

WHAT YOU’LL NEED:
– 1x Watermelon sliced (1 inch slices)
– 1x Cup of Sugar
– 1x Jalapeno

WHAT TO DO:
Macerate the jalapeno in a Ziploc bag with half the sugar by slicing it in half, sealing the bag and banging it with an empty wine bottle until the sugar turns green. Toss in the rest of the sugar and give it a good final mix! *CAREFULLY* Turn the grill up to its hottest setting and char the watermelon. No longer than 2 minutes a side, as the watermelon will get soft. Sprinkle jalapeno sugar on the watermelon and get snacking!
