FORA Bites: Overnight Oats

ATTENTION: Your quest for a tasty yet healthy breakfast is finally over, you can thank us later (ok, ok, no thank us now please we love compliments). Overnight oats are about to rock your world in the oatiest way possible. We’ve picked two seriously delicious recipes for you to try (think eating banana bread in a bowl covered in coconut and cinnamon).

Overnight oats have amazing health benefits- GET BEACH BODY READY – and will take your morning mood from skipping-class to kick-ass in just one bite. Did we mention how easy they are to prepare? Keep calm and oat on.

Blueberry Cinnamon Overnight Oats

Ingredients (yields 1 serving)

  • 1/2 cup rolled oats
  • 1/2 cup vanilla or plain almond milk
  • 1/2 cup fresh or frozen blueberries (we recommend fresh)
  • 1/2 tablespoon chia seeds
  • 1/4 teaspoon ground cinnamon
  • Maple syrup or honey

Instructions

1. Pour the oats, almond milk and chia seeds into an airtight container (mason jars work well) and stir until everything is evenly dispersed

2. Drizzle with maple syrup or honey if you want to sweeten things up

3. Add blueberries and cinnamon (mix or leave on top)

4. Refrigerate overnight

5. Open & enjoy straight from the fridge!

Peanut Butter Banana Bread Overnight Oats

Ingredients (yields 2 servings)

  • 1 large ripe banana, mashed
  • 1/4 cup smooth all-natural peanut butter
  • 1 cup rolled oats
  • 1 cup almond milk
  • 1 tablespoon chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon honey

Toppings

  • Sliced Bananas
  • Cinnamon
  • Coconut shavings
  • Chocolate chips if you’re feeling sassy

Instructions

1. In a medium bowl, mash your banana until consistency is smooth

2. Add the remaining ingredients to the bowl and mix

3. Pour the mixture into an airtight container and refrigerate overnight

4. You can either add your toppings before refrigerating or add once ready to eat!
